Uncle Rico’s Crock Pot Barbacoa

Barbacoa is a tender, flavorful dish that can be made with beef, lamb or even pork. By cooking it slow and low with the right spices, Barbacoa can deliver the goods for not very much money.
Ingredients:
- 2-3 lbs lamb, pork or beef -
- 1-2 OZ Achiote Paste -
- 2 TBSP apple cider vinegar -
- 1-1/2 cups BBQ Sauce - (your favorite)
- juice and pulp from 1 large orange -
- 1 cup water -
Instructions:
Mash achiote paste into BBQ sauce until thoroughly combined. Spread sauce over all sides of meat and place in crock pot. Squeeze orange juice and pulp over meat and pour add remaining ingredients. Set crock pot on low and cook for 8-10 hours.
*Conventional Oven Directions*
Preheat oven to 400°. Mash achiote paste into BBQ sauce until thoroughly combined. Place in a Dutch oven or casserole and spread sauce over all sides of meat. Squeeze orange juice and pulp over meat and pour in remaining ingredients. Cover and place in oven, cook for 30 minutes, remove cover and cook for 10 more minutes.
