You could wrap bacon around just about anything and it would be good. In this instance you get sweetness from the corn and savoriness from the bacon. What could be better?
Bacon Wrapped Grilled Corn On The Cob
Peel down husks, but leave them on the cob. Remove silks. Wrap each ear with a piece of bacon, one strip per cob should do it, but use more to cover the cob. Fold the husks back over the bacon wrapped corn and secure with a small piece of aluminum foil. Grill at medium heat for 20 minutes, rotating as you go. Husks should have a nice even char to them when done.
The bacon won\'t get crispy because it\'s protected by the husks, but it infuses a smoky bacon flavor into the corn. You won\'t even need to add butter, although nobody is calling you out if you do.
Vegetarian option: lightly season corn with smoked paprika and finish with butter and sea salt.
