		<description>Thanksgiving&#039;s a heavy meal.  I agree about Alsatian or other wines that can cut through some of the heaviness, and I think Pinot Gris is a good one-wine solution.  The two-wine solution isn&#039;t one I prefer, just because it encourages more wine drinking, which equals even more caloric overload and after-meal sleepiness.  I&#039;m all about the food on Thanksgiving, and feel too many alcohol calories cuts not the heaviness, but the enjoyment.  There&#039;s a point of diminishing returns.  A not-to-be-overlooked one-wine solution that goes with everything and cuts through heavier flavors is Champagne or any good sparkling wine.  I tend to like Italian sparklers, but that&#039;s me.  Also, don&#039;t fear the sparkling roses, such as Schramsberg Mirabelle Brut Rose.  A delicious, well-regarded red or rose sparkling wine is versatile and festive, and the color and bubbles have a holiday feel.  Other overlooked bubbly boozes are cider and perry, which can be complex, balanced, palate-cleansing and autumnal.   </description>
